Dear April

Dear April,
Though we just met, I can already tell you’re going to be a month full of changes. Some good, some bad; but nevertheless, I feel them coming. This past month started out great, but ended like a train wreck. What I once considered stability, crumbled beneath my feet, leaving behind cracks in the surface that The Grand Canyon would be jealous of. I can’t tell you the level of disappointment I’m feeling, in people and in places. Though I’m not quite ready to divulge into details about why the third month and I decided to end things on bad terms, and I probably never will, just know that it was enough to send this newly-tough mama into a whirlwind of emotions and made me take a closer look into what I want to do with my life. Because anything/anyone/any place that doesn’t realize that I’m a mama FIRST, should be dislocated from my life without hesitation. End of story.
All in all, this year has been great. I haven’t a single complaint (besides this one) so far and I’m optimistic that things’ll only get better from here. March, I bid you adieu and plan to sweep any recollection of the last four days under the rug. But I do promise one thing, I won’t let it bring me down. I’m going to put my big girl shoes on and remind you who is in charge here.
Oh, sweet fourth month of the year, while you’re bringing sunny days, chirping birds and flowers galore, please remember one thing. Take it easy on me. I’ve been knocked down, pushed back and dragged through the shit pile of life. All I ask is that you treat me fairly. I don’t mind working hard or trying new things, but I do expect to get rewarded for the things I do right. Because I am worth it.
Yours truly,
A

A Zoo-riffic Adventure

I can't stress to y'all how much family time has meant to us lately. These past few weeks have literally flown by, because we've been so focused on working and each other; little else included. My husband and I have made it a point to spend these days together, ones that are few and far between, because life (as we've recently learned) has no intention of slowing down; whether or not we want it to. Don't get me wrong, working hard and making a stable life is important. We know that. But what's more important is ensuring that we, and our daughter, live life to the fullest and love with every square inch of our hearts. Laughing is as essential to life as water or food is. For it is nourishment for our souls. This is why we have chosen to make Wednesday our Family Day. Every Wednesday, every week, a new place to visit, new restaurant to try, new memories to make. Life is too short to spend it unhappy or inexperienced.

This week we chose to make the 64 mile trek to the Jacksonville Zoo & Gardens, since neither Papa nor Kiri had ever been to one. And I must say, it was a big hit! Brayden came over to play, so we took him with us! We saw giraffes, monkeys, kangaroos and even stingrays! Kiri even came home with a black plush gorilla that she named 'Willow'. Willow and Ninny are brother and sister, reunited at last. They now go everywhere with her. TOO CUTE, I say. Here are a few photographs of our day!

Afternoon By The Sea

There's nothing more wonderful than spending a sunny afternoon, perched atop a boardwalk, snacking on Panera Bread and laughing with the ones you love. This is how we spent our Wednesday.

P.S. I'll be back to blogging again soon! With all the sporting events going on in Daytona Beach, plus the little spontaneous family trips we've been taking lately, I've hardly had the time to sit down and relax, let alone write about how sweet its been. Don't worry though, I'll be back before you know it!

Take care, all.

Rainy Day Blues

Papa's working late tonight, so it's just me and my little sweet. It's down pouring and super dark out also, so there's not much we can do besides snuggle up under some blankets and watch 'Tangled'. On repeat.

Eh, but I don't mind. Just knowing I'm able to be here with her is enough for me. I still think I'm the luckiest. Actually, scratch that, I know I am.

In other news, I'm pretty excited about our dinner tonight. After raising Kiri on a meat-inclusive diet for the past three years, I was sort of apprehensive about letting her try veggie burgers. I didn't want her to become a picky eater or turn them away altogether. I finally got the courage after our -amazing- Whole Foods trip....(Kiri was quite impressed that they let her try oranges -they had a blood orange display up with some samples available!) and after she fell in love with the avocado smoothie and almond milk I had her try. BUT! Much to my surprise, she loved her Boca Chick'n patty! I don't even think she noticed a difference. Heck, even I couldn't! She even liked them so much, she asked for seconds! Day maker right there. My little healthy girl. Makes me smile, honestly.

Photobooth Fun

Pre-work Photobooth-ing with my favorite little person. Man, we have so much fun together.

'Super Bowl' Sunday And A Super Bowl To Match

Being that this is our first year as non-meat eaters, my family's typical Super Bowl Sunday feast won't be anything close to what we're used to. The normal turkey burgers with all the fix-ins, heaping piles of mayonnaise-ridden potato salad and Bush's baked beans are just not gonna cut it this year. And for my beer and junk food loving husband, this could pose a challenge.

In preparation, I've been doing a lot of research. I'm trying to keep our diet as close to vegan as possible, so that when we feel we're ready to fully commit to it, it won't be such a shock to our system. So when I moseyed my way over to The Kind Life for my daily read, I was elated to see a post Alicia made about the very situation I find myself in today. Which gave me hope that you can appease your husband's burger-beer-football needs on Super Bowl Sunday. Touchdown!

So, this Sunday afternoon, when we're cheering on our home team (the New England Patriots, woo!), we'll be divulging in Boca Burgers, vegan potato salad and homemade baked beans! My stomach is already growling!

Here's to a win in the kitchen AND a win on the field!

A Life-long Commitment: Our Humble Diet

Since the start of the new year, our diet has been completely, one-hundred percent meatless and a lot healthier. Despite some bad choices lately, (i.e. veggie pizza two nights in a row and calzones loaded with mozzarella and ricotta cheese---those have to be sinful!), we're still feeling better for the most part. And my digestive system is slowly improving. Slowly but surely. And slow is better than I've been getting, believe me!

I've been stuck like glue to the 'Engine 2 Diet' book I bought last week and I find myself frequenting Alicia Silverstone's 'The Kind Diet' blog. I'm so inspired that everything they do/live for, I'm just stuck. I have no idea where to begin. Some of the foods they discuss are so foreign to me.  I hear a lot of you talking about quinoa, spelt and tofu---how do I cook them? If I'm in a rush or on a tight budget one week, how do I get a hold of them? Hence why we've been eating on what seems to be a 3-day repeat. Nevertheless, I'm researching (well, er, googling!) nonstop, trying to come up with not-so fancy-schmancy dinners, but simple and attainable things that my toddler will enjoy. I've found some pretty awesome recipes, like homemade crock-pot vegetable stew and homemade black bean burgers that Bop and I are super excited to try. Things that give us a little nudge of reassurance! WE GOT THIS.

We've also been budgeting a time-schedule for some intense workouts. Now that Papa is working close to 70 hours a week and I'm logging in at the high 40's, we're struggling to find the common hours to devote to being together, never mind heading to the gym! But after sitting down and making up a schedule (kind of like a work one!) we've found 10 available hours a week that are reasonable, do-able and workable. This is exciting. Because every time I step foot in or out of that gym, I know I'm doing a good job. And the feeling I get once I burn some unnecessary post-baby fat is just wonderful.

So here's to a lifelong commitment to a good, whole lifestyle. I plan on working hard to make a positive change in my life. And with some severe dedication and the support from all of you, I know we'll make it.

New Read, Better Life

After watching the movie 'Forks Over Knives', I was made more aware of the fact that some of my medical and physical conditions may in fact be the result of the toxins I'm putting in my body, so I decided to make a change and try vegetariansim (which will progressively turn into veganism). I'm tired of the stomach pains, the chronic fatigue and the depression. I want better for myself and for my little family. So, we decided that in 2012, we were going to omit meat from our diet.

Today is Day 25, and I feel amazing. I don't drink as much coffee (I'm currently making the switch to Tazo tea!), I'm up earlier in the day and I don't have the massive cramps and bathroom (or not-bathroom) issues. While I watched the 'Forks Over Knives' movie, Rip Esselstyn's testimonial really touched me. For the past three years, I've been begging Robert to join me on a plant-based diet, but have always been unsuccessful because a) his mother lived with us & she was a "cook-a-meal-for-20-when-there-is-only-four-of-us" kind of Italian woman and b) I couldn't find any solid proof that you could be a man, not eat meat and still gain muscle. Not anymore though. With the Engine 2 Diet, this man proved the opposite.

I was super bummed that I had to work last week when he was due to visit Whole Foods-Jacksonville. I really wanted Bop to hear first hand how easy his journey was and how much it changed his life. But yesterday, I found a package on my stoop and turns out, Papa ordered it for us instead! I'm so unbelievably happy and so isn't Papa! He's such an inspirational man and we simply cannot wait to divulge into this book.

I'll let you know what I think!

Peek-A-Boo Springtime

Well well, Springtime. Thank you for making a sun-shiny appearance today! 70* with bright blue skies and a small ocean breeze? We'll take it.
